Secret pleasures: Lazy Girl's Toasted Cheese Sandwich - 171 calories

I have a secret that I'm not proud of - I love Kraft American singles. I know a lot of people look down on Kraft Singles for not being "real" cheese. But I grew up eating it and for years I did not even know that it was a "cheese food" or whatever they have to call it. It melts wonderfully, it's salty, and has that cheese puff cheese taste that I love.

I've been having a hell of a time trying to get full today. My upper body workout really wiped me out. I did some serious assisted dips and have been killing it on my cable rows and shoulder presses. I've already had some leftover pasta and bolognese sauce (330 cal) and 5 best ever fish sticks (major Costco win - 309 cal) with cilantro dip . But I'm still starving. So I'm pulling in a childhood favorite.

I don't eat it often (any more). But when I do it's oh so good. I figure I deserve a little treat before my next Fast Day.

Lazy Girl's Toasted Cheese Sandwich: (171 calories)

Ingredients:

  • 2 slice of soft, fluffy, bad for you, full of sugar, white bread (100 cal)
  • 1 Kraft Single American (60 cal)
  • 1 tsp Spicy Brown Mustard (5 cal)
  • 10 g Cilantro Yogurt Dip (6 cal)

Instructions:

  • Assemble all the ingredients except for the Cilantro Dip. 
  • Pop in the toaster oven, toast until desired brown-ness. 
  • Cut into quarters and dip into sauce.


You barely need teeth to eat this afternoon snack!

Noodle soups are a mainstay in Vietnamese cuisine. Pho (pronounced: fuh), both chicken and beef, takes the spotlight in popularity. But there are many, many other noodle soups that range from spicy (Bun Bo Hue) to sweet (Bun Rieu) to seafood based broths (Hu Tieu) that are also quite delicious.

I wanted to cook something light and refreshing for Mr. J's return from a long, hard week at a client site and Hu Tieu jumped out at me as the perfect fit. Also it didn't help that Wandering Chopsticks was taunting me with wonderful Retro Posts all week on her Facebook page and this was one of the dishes.

Easy Pastry Crust Recipe without a Food Processor

As a follow up to my Curry Minced Beef Pot Pie post. I thought I'd share how I got over my fear of pie dough.

As usual it starts with my food idol Kenji Lopez-Alt and his super simple recipe for an easy pie crust. The only catch was that he used a food processor and I don't have one. I had faith in Kenji's recipe development skills when he said that this was fool proof so I followed his step by step photo gallery and used the pictures to gauge if I was doing it right.

I figured that I could do this dough by hand since the first step was to create a paste with the butter and 3/4 of the flour. That's easy enough - that is if I had remembered to take the butter out of the freezer first. Fast forward 30 minutes with the butter at room temperature, a little elbow grease and voila - pie crust!
